For years our parents have said that breakfast is the most important meal of the day and there is scientific proof that skipping it can be detrimental impact on the rest of your day. Given the choice between 30 extra minutes of sleep and cooking breakfast, we would hedge our bets that sleep wins. But what if we told you that you could get a delicious, filling and dare we say nutritious breakfast on the table quicker than it takes to wash your face?
Let us introduce you to Prosciutto Avocado Toast. Jackie Gillum of SnackieGillum fame continues to work her magic on the first meal of the day. Last time around, we had Jackie focus on brunch for Dad with her delicious pancakes. However, few of us have the luxury of time in the morning, so we asked Jackie to create a delicious and fast morning meal that can even be eaten on the go. Enter, Jackie’s version of the ultimate breakfast sandwich and it could not be easier to make.
PROSCIUTTO AVOCADO TOAST
- 2 slices of thick bread
- 4 tablespoons of fresh ricotta cheese
- 4 slices of prosciutto
- 1 ripe avocado, thinly sliced
- 1 lemon
- 2 tablespoons fresh chives
- Parmesan cheese
- Olive oil
Toast a slice of bread to lightly brown and spread with two tablespoons fresh ricotta cheese per slice. Next add two slices of thin prosciutto per toast. Top each toast with half of an avocado (sliced). Drizzle with olive oil and a squeeze of a lemon. Salt and pepper to taste. Garnish with lemon zest and chives. Finish it up with freshly grated Parmesan cheese.
And that is it! We think we can give up less than 10 minutes of sleep to start our mornings off with this delicious kick start! Pair with a cup of coffee, strong tea or fresh juice and we think, we could start a new weekday morning habit. Now only if exercising was as easy!
