Cool Off This 4th of July with a Watermelon Margarita

While margaritas may not be the first thing that comes to mind for the 4th of July, they are a delicious way of serving a large crowd since they can be made in large batches and placed in drink dispensers. The Watermelon Margarita from our 4th of July PB Party is a great twist on a classic cocktail thanks to the infusion of juicy watermelon.  One sip and you will know why our collaborator, Alexis Traina, says that they are a must have for any summer gathering.

Watermelon Margarita

Serves 8

Ingredients

1 small ripe seedless watermelon, rind removed

1 1/4 cups of silver tequila made from 100% agave

1/2 cup fresh lime juice

1/4 cup sugar

8 watermelon wedges

8 fresh lime slices

lime wedges

flaked salt

Directions

– Puree watermelon in batches in blender.  Strain through sieve set over large bowl.  Mix 5 cups puree (reserve any remaining puree for another batch), tequila, lime juice and sugar in large pitcher.  Refrigerate until cold, approximately one hour.

– Run lime wedges around rim of glass to moisten; dip rim into flaked salt.  Repeat with remaining glasses.  Pour margaritas into glasses.  Garnish with watermelon wedges and lime slices.

And there you go — delicious libations sure to please a crowd and it doesn’t hurt that this cocktail is the perfect colorful accent for our Americana tabletop!
