Our favorite baker, Rachel of Kawaii Sweet World (see her Thanksgiving cupcakes and Gingerbread Christmas Trees) is back at it in the kitchen whipping up the perfect treat for New Years Eve — chocolate cupcakes! Chocolate Cupcake Recipe
Ingredients:
1 1⁄3 cups flour
1⁄4 tsp baking soda
2 tsp baking powder
1⁄4 tsp salt
3⁄4 cocoa powder
3 T butter
1 1⁄2 cups sugar
2 eggs
1 tsp vanilla extract
1 cup milk
Directions:
1. Preheat oven to 350F
2. Whisk together flour, baking soda, baking powder, salt, and cocoa powder.
3. In a separate bowl, cream together butter and sugar. Add eggs one at a time, mixing
after each addition. Mix in vanilla extract, and alternate adding in flour and milk.
4. Fill cupcake liners 3⁄4 of the way full, and bake for about 18 minutes.
Buttercream Recipe
1 cup (2 sticks) butter, softened
3 cups powdered sugar
1 tsp vanilla extract
23 T milk
1⁄2 tsp red, orange, and yellow gel food coloring (more if liquid food coloring)
Directions:
1. Cream together butter and sugar until light and fluffy. Mix in vanilla extract, and add
enough milk to reach desired consistency.
2. Divide frosting between three bowls and color with red, orange, and yellow food coloring.
