Christmas is only one week a way! We’re so excited to lounge around this weekend, watch Christmas movies and bake some yummy treats! We turned to our favorite baker, Rachel of Kawaii Sweet World (you may remember her from her Thanksgiving cupcakes) to whip up some delicious Christmas gingerbread tree cookies! Gingerbread Cookie Recipe
Makes about 18 cookies
Ingredients
1⁄2 cup sugar
1⁄4 cup molasses
1⁄4 cup water
1 1⁄2 tsp ground ginger
1 tsp cinnamon
1⁄2 tsp cloves
1⁄2 cup (1 stick) butter, softened
2 cups flour
3⁄4 tsp baking soda
Pinch of salt
Directions:
1. In a medium saucepan, stir together sugar, molasses, water, ginger, cinnamon, and
cloves. Bring to a boil and stir until sugar dissolves. Remove from heat and stir in butter.
Let cool 15 min.
2. In a large bowl, whisk together flour, baking soda and salt. Stir in cooled molasses
mixture. Wrap dough in plastic wrap and refrigerate for 2 hours or freeze for 1 hour.
3. Preheat oven to 375F. Roll out cookie dough until 1⁄4”1⁄8” thick and cut into two large
strips. Cut each stip into triangles, then transfer to parchment paper lined baking sheet
and rub backside of each cookie with a dab of water. Attach sticks with excess cookie
dough and bake for 810 min.
Royal Icing Recipe
Ingredients
2 egg whites, beaten until foamy
3 cups powdered sugar
1 – 2 T tsp water
1⁄4 tsp cream of tartar (optional)
Directions:
Sift powdered sugar and cream of tartar into a large bowl. Mix in beaten eggs, and whip for 5
min until stiff. Add water until desired consistency is reached.
