Game Day Deliciousness: Spicy Pulled Pork Sliders & Cider Cole Slaw

Game Day is right around the corner, and if you’re anything like us, the game itself is mostly just an excuse for the food being served! While we love experimenting with new spins on classics, sometimes you just need the comfort of your favorite party food. Fortunately for us, we know about Nik Sharma of the mouthwatering culinary blog A Brown Table.

Nik is one of those guys who loves food, so much so that he left his pharmacology job to pursue a full-time career as a pastry chef and food photographer! His approach to cooking is simple: Good food made with the best possible ingredients. He seemed like the right person to help us perfect one of our favorite game day snacks: Pulled Pork Sliders with Cole Slaw. We’re pretty sure Nik’s version may be our new go-to!

Pulled Pork Sliders with Cider Cole Slaw

Spicy Pulled Pork Sliders

Serves: 8 sliders

You’ll need:

  • 1.5 lbs pork shoulder
  • 1 teaspoon sea salt
  • 2 Tablespoons dry mango powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander seeds
  • 1 teaspoon ginger powder
  • 1 teaspoon mustard powder
  • 1 teaspoon red chili powder
  • 1 teaspoon paprika
  • 2 bay leaves
  • 2 1/2 cups apple cider
  • 1/4 cup apple cider vinegar
  • 8 brioche slider buns

Directions

1. Place a wire rack at mid-level in an oven and preheat the oven to 400F. Trim off excess fat and discard.

2. Season the pork with salt and then place it in a 5 quart dutch oven. Add all the remaining ingredients to the dutch oven and stir.

3. Cover the mouth of the dutch oven with a piece of aluminum foil. Place the lid and transfer to the oven for 3hrs.

4. Remove from oven. The meat should be tender and soft and easily come pull apart with a fork.

5. Drain any excess fat from the top of the liquid and discard. Keep warm.

6. To serve, slice the brioche slider buns in half and fill with a generous scoop of the pulled pork and about two tablespoons of Cider Cole Slaw (recipe below).

Cider Cole Slaw

You’ll need:

  • 1 crisp apple (like Pink Lady), halved and cut into thin slices
  • 1 cup red cabbage, shredded
  • 2 Tablespoons scallions, thinly sliced
  • 1 teaspoon celery seed
  • 1/4 cup apple cider vinegar
  • 1 teaspoon spicy mustard
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper

Directions

1. Mix all the apple, cabbage, scallions and celery seed in a medium-sized bowl.

2. In a small bowl, whisk together the cider, mustard, salt, and pepper. Drizzle over the salad in the medium-sized bowl and toss to coat it evenly.

3. Allow to sit for 10 minutes before serving.
